Reuben Sandwiches

Prep Time 5 minutes

Ingredients

  • Rye Bread
  • Corned Beef
  • Sauerkraut
  • Thousand Island Dressing
  • Miracle Whip optional
  • Swiss Cheese

Instructions

  1. Place rye bread on a cookie sheet, one piece for every sandwich you want to make. Layer corned beef, sauerkraut, dressings, and then cheese.

  2. Place in the oven under broil until cheese is melted, top with a slice of rye bread and put back in the oven for 30-60 seconds until bread is toasted as desired. ENJOY!!!

Recipe Notes

*** Substitute corned beef for turkey to make a Rachel instead of a Rueben.

Rueben Slider


Ingredients

  • Slider Buns (pretzel, potato bun, kaiser, whatever you prefer)
  • Corned Beef
  • Sauerkraut
  • Thousand Island Dressing
  • Miracle Whip optional
  • Swiss Cheese

Instructions

  1. Slice buns into two large pieces (the tops in one piece and the bottoms in another) and place the bottoms into a 9x13 or onto a cookie sheets. Begin to layer the sandwich with corned beef and sauerkraut as if the slider bottoms were one large bun. Then put the dressings on your sliders spreading nice and even. Top with Swiss cheese.

  2. Place in the oven under the broiler until cheese is melted. Put the tops onto the sandwiches, cut into individual sliders, and serve.

Recipe Notes

*** Substitute corned beef for turkey to make a Rachel instead of a Reuben.

Reuben Slaw

Ingredients

  • 4 cups Shredded Cabbage
  • 1 cup Miracle Whip
  • 1/4 cup Thousand Island Dressing
  • 1/4 cup White Vinegar
  • 1 cup Swiss Cheese Shredded or Cubed
  • 1 cup Corned Beef Shredded or Cubed

Instructions

  1. Combine Miracle Whip, Thousand Island, and vinegar in a small bowl. Pour mixture over cabbage and let sit in refrigerator for 30 min. 

  2. Mix in cheese and corned beef. Enjoy!

Rueben Casserole


Ingredients

  • 1 bag Sauerkraut drained
  • 1 lb Chipped Corned Beef
  • 8 oz Thousand Island Dressing
  • 1 lb Sliced Swiss Cheese
  • 12 slices Rye Bread cut into cubes
  • 4 T Butter melted

Instructions

  1. Preheat oven to 350.

  2. In a 9x13 dish, layer sauerkraut, corned beef, dressing & cheese.

  3. In a large bowl, toss together bread and butter.

  4. Place the cubes of bread on top of the layer of cheese.

  5. Bake uncovered for 30 min.

Reuben Dip

Ingredients

  • 4 oz Cream Cheese softened
  • 1/3 cup Miracle Whip
  • 1/3 cup Thousand Island Dressing
  • 1 Tbsp Milk
  • 1/2 lb Corned Beef shredded or cubed
  • 1 (approx 15 oz) can Sauerkraut
  • 1 lb Swiss Cheese Shredded
  • 1 large bag Rye Chip for serving

Instructions

  1. Preheat oven to 350.

  2. Mix together cream cheese, miracle whip, thousand island, and milk.

  3. Stir in corned beef and sauerkraut.

  4. Place in a 9x13 and top with Swiss cheese. Bake for 20-30 min. Serve with rye chips
