Mini Meatloaves

These mini meatloaves are wonderful. You can make a large meatloaf instead, but these make it easier to create desired portion sizes and it also makes the baking time fly by.

I have also made quite a few meatloaves ahead of time to put in the freezer which is a real time saver (especially because I hate working with the raw meat) Another thing I have done with the meatloaf is cooked it in the crockpot on low for about 6 hrs. This helps keep the moisture and allows you to have dinner ready when you get home.

Mini Meatloaf

Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • 1 pound ground beef
  • 2 large eggs
  • 1/2 cup Italian breadcrumbs
  • 1/2 cup parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1/2 tsp onion powder
  • 1/2 tsp parsley
  • 1/4 tsp garlic salt
  • 1/4 tsp pepper
  • water to fill the pan
  • 2 Tbsp BBQ sauce optional

For the Sauce

  • 1/2 cup reserved water from baking
  • 1/2 cup BBQ sauce I like sweet baby rays
  • 1/4 cup Worcestershire sauce

Instructions

  1. Preheat oven to 350.

  2. Mix together the ground beef, eggs, breadcrumbs, parmesan cheese, and spices. Shape into mini loaves and place inside a loaf pan.

  3. Fill loaf pan with 3/4 of the way full with water. (top loaves with 2Tbsp BBQ sauce if desired). Bake for 30 min.

  4. Drain water from pan and reserve 1/2 cup of the water.

  5. Combine reserved water, BBQ sauce, and Worcestershire in a small bowl to make the sauce for the meatloaf.

Recipe Notes

4 loaves = 540 calories per loaf             

6 loaves = 360 calories per loaf.                                                                                                                   

Make it a meal with some roasted potatoes and creamed peas.
