These mini meatloaves are wonderful. You can make a large meatloaf instead, but these make it easier to create desired portion sizes and it also makes the baking time fly by.
I have also made quite a few meatloaves ahead of time to put in the freezer which is a real time saver (especially because I hate working with the raw meat) Another thing I have done with the meatloaf is cooked it in the crockpot on low for about 6 hrs. This helps keep the moisture and allows you to have dinner ready when you get home.
- 1 pound ground beef
- 2 large eggs
- 1/2 cup Italian breadcrumbs
- 1/2 cup parmesan cheese
- 1 tsp garlic powder
- 1 tsp oregano
- 1/2 tsp onion powder
- 1/2 tsp parsley
- 1/4 tsp garlic salt
- 1/4 tsp pepper
- water to fill the pan
- 2 Tbsp BBQ sauce optional
For the Sauce
- 1/2 cup reserved water from baking
- 1/2 cup BBQ sauce I like sweet baby rays
- 1/4 cup Worcestershire sauce
Preheat oven to 350.
Mix together the ground beef, eggs, breadcrumbs, parmesan cheese, and spices. Shape into mini loaves and place inside a loaf pan.
Fill loaf pan with 3/4 of the way full with water. (top loaves with 2Tbsp BBQ sauce if desired). Bake for 30 min.
Drain water from pan and reserve 1/2 cup of the water.
Combine reserved water, BBQ sauce, and Worcestershire in a small bowl to make the sauce for the meatloaf.
4 loaves = 540 calories per loaf
6 loaves = 360 calories per loaf.
Make it a meal with some roasted potatoes and creamed peas.
